What cheese should I choose from?

I'm standing at the counter and I was asked which cheese I want. I have absolutely no idea. In fact, I don't even remember how I got here. The last thing I remember was an intense game of scrabble where I was about to win the game using the word 'thistle'. Now the man behind the counter is demanding I select from a variety of cheeses. I noticed a fire extinguisher on the wall to my right, do you think I could successfully grab it and use it to make my escape... no that would be far too easy...
