I'm starting to watch more anime, what should I watch?

I haven't watched very much anime before but I would like to get more into it. I've seen Akira, The Animatrix, and a few Miyazaki movies like Princess Mononoke, Spirited Away, and Howl's Moving Castle. The things that I've looked at that sound good are Appleseed, Afro Samurai, Cowboy Bebop, Vampire Hunter D, and maybe Full Metal Alchemist and Ghost in the Shell. What are some suggestions and/or thoughts?
